2 cups rice, cooked 1 large bell pepper 1 large onion 4 strips bacon, fried crisply 1 can tomatoes 1 can tomato soup 1/2 tsp. Tabasco sauce 1 tsp. parmesan cheese salt and pepper to taste
1. Fry bacon; remove and drain on paper towel.
2. Saute chopped onion and chopped bell pepper in bacon drippings.
3. Add tomatoes, Tabasco sauce and crumbled bacon and mix with rice.
4. Pour into greased casserole dish; sprinkle top with parmesan cheese and bake at 325-degrees for 30 minutes or until rice is dry enough to separate.
