1 small garlic clove, crushed or minced garlic 2 tablespoon extra-virgin olive oil 1 1 to 1 1/2lb. round loaf of french or italian bread 1 8 ounce wheel of brie 1 tbss. minced parsley
1. Preheat oven to 350-degrees.
2. In a small bowl, mix garlic in olive oil and
set aside. Slice off top third of bread loaf.
(Top of loaf can be reserved for other uses,
such as bread crumbs, or sliced to serve with
baked cheese.)
3. Using wheel of cheese as a guide, trace it on
center of cut bread, then cut down as deep as
the cheese is high. Scoop out center to fit
cheese.
4. Cut 1/2-inch slices around edges of bread,
taking care not to cut through bottom of loaf.
Brush cut surfaces of bread with garlic oil
and sprinkle with parsley. Without removing
rind, insert cheese into center of loaf.
Score top of cheese several times to ensure
even baking.
5. Wrap loaf loosely in foil and place on a
baking sheet. Bake until bread is lightly
toasted and cheese begins to melt, about 30
minutes. As soon as bread is cool enough to
handle, have guests pull off slices spread
with melted cheese, using a small knife.
