1 lb lean pork tenderloin 2 Tbsp vegetable oil 1 garlic clove, chopped 1 lemon grass stem, shredded 1 inch fresh ginger root, finely chopped 1 red bell pepper, thickly sliced 1 green bell pepper, thickly sliced 1 onion, thickly sliced 2 Tbsp lime juice oiled noodles or jasmine rice to serve
1. Cut pork into long, thin strips.
2. Heat vegetable oil in a large skillet or wok over high heat. Add the garlic and stir-fry for 1 minute.
3. Add pork and stir-fry for another 2-3 minutes until lightly colored. Stir in the lemon grass and ginger. Remove Wok from heat.
4. Remove pork from skillet and keep to one side. Add the bell pepper and onion to the skillet/wok and stir-fry over high heat for 2-3 minutes. Onions should be light golden brown and slightly softened.
5. Return the pork to the skillet, stir in the lime juice. Season to taste with salt and pepper. Serve with noodles or rice.
