1 pound dried black eyed peas 2 ounces diced pimiento, drained 2 cups Italian salad dressing 1 tablespoon finely chopped garlic 2 cups diced green pepper salt to taste 1 1/2 cups diced onion hot pepper sauce to taste 1/2 cup finely chopped jalapeno peppers 1 cup chopped parsley (optional)
1. Soak peas overnight.
2. Cook peas until just tender, about 40 minutes. Do not overcook.
3. Drain peas.
4. In a large bowl, combine peas and salad dressing. Let peas cool.
5. Add green pepper, onion, jalapenos, pimiento, garlic, salt, hot pepper sauce, and parsley.
6. Marinate overnight.
7. Serve as a relish, on a bed of lettuce as a salad, or can be stuffed in a tomato.
