1 pt. frozen or fresh peas 2 hard-boiled eggs peanuts 4 Tbs. lite , mayonnaise 1/2 Tbs. yellow mustard salt and pepper to taste
1. Boil peas 1 minute. Drain well and set aside to cool.
2. Chop hard-boiled eggs, reserving 2 to 3 slices for topping.
3. Mix peas, eggs, peanuts, mayonnaise and mustard.
4. Refrigerate 1 hour before serving.
