5 cups beef cubes 1 28-ounce can tomatoes 2 tablespoons flour 3 tablespoons chili powder 1 tablespoon paprika 1 tablespoon cinnamon 1 teaspoon chili powder 1 teaspoon ground cloves 2 teaspoons salt 1 teaspoon dried and crushed red peppers 3 tablespoons lard 2 cups chopped potatoes 2 onions, sliced 2 cups chopped carrots 1 clove garlic, minced
1. Combine flour, paprika, salt, and chili powder.
2. Dredge beef cubes in the flour mixture and brown in hot lard in Dutch oven.
3. Add onion and garlic; cook until soft.
4. Add tomatoes, chili powder, cinnamon, cloves and red peppers. Cover and simmer two hours.
5. Add potatoes and carrots; cook until vegetables are tender (about 45 minutes).
