1 can (14-3/4 ounces) creamed corn 1 can (11 ounces) Mexicorn 1/4 cup diced sweet red pepper 1/4 cup diced green pepper 1 package (6-1/2 to 8-1/2 ounces) corn muffin mix 1 cup sour cream 2 tablespoons butter, melted 1 egg 1-1/3 cups french fried onions, divided
1. Combine corn, peppers, corn muffin mix, sour cream, butter, egg and 2/3 french fried onions.
2. Pour mixture into a greased 2-qt. shallow baking dish. Bake at 350F for 40 minutes or until mixture is set.
3. Top with cheese and remaining onions. Bake 5 minutes longer or until onions are golden.
