2 pints okra 1/4 cup bacon or other cooking fat 2 cups diced celery 1 green pepper, seeded, diced 1 small onion, peeled, chopped 2 large tomatoes, peeled, seeded, chopped 1 teaspoon brown sugar 1/4 teaspoon paprika 4 cups boiling water acon for garnish
1. Cut stems from okra; slice.
2. Heat fat in kettle. Add okra, celery, pepper, and onions; saute about 5 minutes.
3. Add tomatoes, sugar, paprika, and water; cover.
4. Simmer about 1 hour, until vegetables are tender.
5. Add seasoning to taste.
6. Add a little diced crisply-cooked bacon sprinkled on top, when serving.
