2 sticks margarine, softened 1 cup light brown sugar 1 cup granulated sugar 2 eggs, well-beaten 1 teaspoon vanilla flavoring 1 1/3 cups flour 1 teaspoon salt 1 teaspoon baking soda 3 cups quick-cooking oats 1 cup chopped pecans
1. Cream margarine and sugars.
2. Add eggs and vanilla flavoring. Beat well.
3. Sift dry ingredients together and add to above.
4. Add oatmeal and pecans, mixing well.
5. Shape into logs about 2 inches in diameter.
6. Wrap logs in waxed paper and chill overnight, or place in freezer until firm but not frozen.
7. Slice and bake on ungreased cookie sheet at 350 degrees for about 10 minutes or until lightly browned on bottom.
8. Remove from oven; cool completely before storing in airtight container.
