20 mushrooms, thickly sliced 2 tablespoons olive oil 1 tablespoon butter 4 scallions, white part only, finely chopped 2 cloves garlic, minced 2-3 teaspoons lemon juice 1/4 teaspoon salt 1/8 teaspoon black pepper 2 tablespoons finely chopped parsley
1. Place mushrooms in large skillet. Cover and cook over medium-high heat until mushrooms start to give off moisture, 5 to 6 minutes.
2. Uncover and cook until they begin to stick to pan. Reduce heat to low and stir in oil, butter, scallions, garlic, and lemon juice. Cook 30 seconds, season with salt and pepper, and serve sprinkled with parsley.
