5 lbs. Yukon Gold potatoes 1 medium jar sweet gherkin pickles 1 large onion 7 hard-boiled eggs 2 stalks celery 1 cup lite miracle whip or lite mayonnaise 2 tablespoons yellow mustard 2 teaspoons celery seed salt pepper paprika
(The secret is in the preparation)
1. Boil potatoes, skins on, until tender.
2. In a very large bowl, drain, skin, cube, and mix
potatoes with 1/3 of the pickle juice. Set aside.
3. Grate the entire onion, and dice all of the pickles and
celery. Mix in with potatoes.
4. In a small bowl, peel 5 of the hard-boiled eggs. Then
mash, and mix in with the lite Miracle Whip and mustard.
5. Add celery seed, salt, and pepper to taste.
6. Toss the potatoes with the Miracle Whip mixture.
7. Gently flatten the top of the potato salad to prepare
for garnish.
8. Slice the 2 remaining hard-boiled eggs, and arrange
artistically on top. Dust with paprika.
