1 medium cucumber 1 small onion 1/2 cup vinegar 1/2 cup water 2 tablespoon sugar 1/4 teaspoon salt
1. Run tines of fork lengthwise down side of unpeeled
cucumber.
2. Thinly slice cucumber and onion into glass bowl.
3. Mix vinegar, water, sugar, and salt; pour over cucumber
and onion slices.
4. Cover and refrigerate at least 2 hours.
NOTE: Eat as is, or drain and serve on salad greens.
