1 pkg (8oz) lasagna noodles 1/2 teaspoon dried whole oregano 1 pound mild pork sausage 1/4 cup grated Parmesan cheese 1 jar (32oz) spaghetti sauce 3 cups shredded mozzarella cheese, divided 1 egg, slightly beaten 4 1/2 ounces sliced mushrooms, drained 12 ounces ricotta cheese 1 pkg (3 1/2 oz) sliced pepperoni 1 tablespoon dried parsley flakes
1. Cook lasagna noodles according to package directions, omitting salt; drain.
2. Cook sausage until browned, stirring to crumble; drain.
3. Stir spaghetti sauce into sausage, and set aside.
4. Combine egg and next five ingredients, stirring well.
5. Spread about 1/2 cup meat sauce in a lightly greased 13x9x2" baking dish.
6. Layer half of the noodles, half of ricotta cheese mixture, one-third of mozzarella cheese, and one-third of remaining meat sauce; repeat layers using equal amounts.
7. Arrange mushrooms and pepperoni slices on top.
8. Bake at 375 degrees F for 20 minutes.
9. Sprinkle with remaining cheese, and bake an additional five minutes.
