2 8-oz packages cream cheese, softened 3/4 cup sugar 2 eggs 1 tablespoon lemon juice 1 teaspoon vanilla flavoring 1 can (21 oz) cherry pie filling vanilla wafers
1. Beat together until fluffy the cream cheese, sugar, eggs, lemon juice, and vanilla flavoring
2. In muffin tins, place paper cupcake liners. Then place one vanilla wafer in each cup.
3. Fill each cup 2/3 full with cream cheese mixture.
4. Bake at 375 degrees for 15-20 minutes, being careful not to let mixture brown on top.
5. Remove from oven and allow to cool.
6. When cool, place 1 teaspoon cherry pie filling in each cup.
7. Chill until ready to serve. If desired, whipped topping can be spooned on top of each cup just before serving.
