8 oz country sausage 8 eggs, beaten 8 oz shredded cheddar cheese 4 medium potatoes, cooked, cooled, and thinly sliced salt and pepper to taste 4 individual ramekins, greased
1. Cook sausage; drain and crumble.
2. Line bottom and sides of each ramekin with potatoes; , add half the sausage, then a layer of cheese, then the rest of the sausage.
3. Pour beaten egg over top; cook in 400 degree F oven for 30 min. or until eggs are done.
