1 10-12 pound ham 2 cups apple juice or cider 3/4 teaspoon whole allspice 1 teaspoon whole cloves 1/2 teaspoon cracked ginger 3 2-inch cinnamon sticks 1 cup honey whole cloves paprika
1. Place ham, fat side up, on rack in shallow pan. Insert meat thermometer in center, using care not to touch bone.
2. Heat apple juice with allspice, 1 teaspoon whole cloves, ginger and cinnamon sticks in saucepan; bring to boil.
3. Cover and boil 5 minutes.
4. Remove from heat and brush a little of this mixture over ham.
5. Bake ham in 325-degree oven for 1 1/2 to 2 hours basting every 15 minutes with mixture.
6. Drizzle 1/2 cup honey over ham. Bake 30 minutes longer.
7. Drizzle remaining honey over ham and cook until thermometer registers 160-degrees.
8. Remove from oven, cool 30 minutes.
9. Score fat and stud with cloves and sprinkle with paprika.
The ham may be garnished with pickled peaches, put in nests of parsley or crab apples.
