4 chicken breasts, skin on 1/4 cup butter, melted 1/4 cup honey 2 tablespoons dijon mustard 3 teaspoons curry powder or garam masala hot pepper sauce 1 small clove garlic, crushed 2 tablespoons soya sauce 2 tablespoons lemon juice 1 teaspoon grated or finely chopped ginger salt and pepper to taste
1. In an oiled baking dish arrange chicken, skin side down.
2. Combine all other ingredients and stir until smooth. Pour over chicken and refrigerate at least 1 hour.
3. Drain excess sauce into cup. Bake chicken, uncovered, in 375 degree oven for 20 minutes.
4. Turn chicken over and baste with remaining sauce. Bake chicken another 20-30 minutes, or until tender and no pink remains, basting periodically.
5. Serve with rice, noodles, or baked potato.
