1 broiler-fryer chicken (3-4lb; whole, split in half, or cut up) 1/2 cup olive oil 1/4 cup lemon juice 1/2 teaspoon salt 1/4 teaspoon black pepper
1. Wash chicken and pat dry with paper towels.
2. Combine oil, lemon juice, salt, and pepper, and stir together well. If using a whole chicken, rub it all over with mixture, amking sure to rub plenty inside body cavity as well. If using cut up chicken, put it in large zip-top bag, pour marinade over it, and seal bag.
3. Let chicken marinate in refrigerator 1 hour.
4. At least 1 hour before you want to serve chicken, pull it out of bag. Roast in large pan in preheated 375F oven about 1 hour. Cook until juices run clear when it's pierced to the bone.
