1 cup mashed potatoes 1 cup potato water 3/4 cup shortening 1 tsp. salt 1/2 cup sugar 1 envelope yeast 3/4 cup warm water 2 eggs, beaten 5 to 6 cups flour Oil 6 cups powdered sugar 1 cup boiling water
1. Mix potatoes, potato water, shortening, salt, and sugar.
2. Dissolve yeast in warm water; add to potato mixture.
3. Stir in eggs and enough flour for stiff dough. Knead on floured surface until smooth; cover. Let rise for 1 hour and 30 minutes. Pat dough out to 3/4 inch thick; cut with doughnut cutter. Let rise until doubled in bulk.
4. Cook doughnuts in 3 to 4 inches oil at 375-degrees in deep fryer until golden brown; drain on paper towels.
5. Mix powdered sugar and boiling water; spread doughnuts with glaze while warm.
These are always a favorite at Halloween Parties.
