2 medium baking potatoes (about 1 lb.) vegetable cooking spray 2 tsp. olive oil 2 cloves garlic, minced 1/8 tsp. salt 1/8 tsp. ground red pepper 1/8 tsp. paprika
1. Cut potatoes into 2x1/4-inch strips.
2. Place potato strips in a large bowl of ice water until slicing is complete.
3. Drain; press between paper towels to remove excess moisture.
4. Coat a nonstick skillet with cooking spray; add oil. Add potato strips, and cook 10 minutes.
5. Add garlic, and cook an additional 10 to 15 minutes or until potato strips are lightly browned and tender, stirring frequently.
6. Sprinkle with salt, pepper, and paprika.
7. To serve, divide potato sticks evenly onto 4 individual serving plates. Serve warm.
These potato sticks go great with cookout foods, or as a snack.
