3 lbs baking potatoes 1 large head garlic 3/4 stick unsalted butter, softened 1 teaspoon salt 1/4 teaspoon black pepper
1. Preheat oven to 350F.
2. Prick each potato with a fork.
3. Cut off and discard the top fourth of the head of garlic.
4. Wrap potatoes and garlic in foil and bake for 50 minutes to 1 hour. Remove potatoes, but let garlic cook for an additional 15 minutes. Then remove garlic to cool, as well.
5. Increase oven temp to 425F.
6. Halve potatoes lengthwise and scoop out pulp (save for another use).
7. Squeeze garlic into a small bowl and mash with butter, salt and pepper, using a fork. Place about a 1/2 tsp of each on each skin; spread evenly.
8. Bake an addtional 25 minutes. Serve with the onion and spinach dip.
