1 teaspoon Knox gelatin 2 tablespoons lemon juice 1 3-oz package cream cheese, softened 2 tablespoons mayonnaise 1/8 teaspoon salt 1/2 cup heavy cream, beaten well 1/4 cup chopped nuts 1/4 cup chopped maraschino cherries 1 #2 can crushed pineapple, drained 1 can grated coconut
1. Pour lemon juice in small cup; heat in microwave until warm but not hot.
2. Sprinkle gelatin over top of lemon juice. Allow to settle, then stir to dissolve.
3. Mix together cream cheese, mayonnaise, and salt. Stir in lemon juice.
4. Fold in cream, nuts, cherries, pineapple, and coconut. Add sugar to taste.
5. Pour into ice tray or similar size pan.
6. Freeze until firm.
7. Garnish as desired, and serve.
