2 eggs, well beaten 1/2 cup flour 1/2 teaspoon salt 1/4 teaspoon black pepper 1 pint large oysters
1. Mix egg, flour, salt, and pepper.
2. Roll oysters in flour mixture.
3. Deep-fry, or fry in skillet at medium-high setting with 3 to 4 tablespoons of oil.
4. Serve immediately--the hotter, the better, as fried oysters lose their crispness when they sit.
NOTE: If you run out of batter because you bread too heavily, it is very easy to mix more egg and flour.
