2 Tbs. tarragon or wine vinegar 3/4 tsp. salt 1/4 tsp. monosodium glutamate 1 small clove garlic, crushed Generous dash of freshly ground pepper 8 ozs. mushrooms, sliced 16-ozs. spinach, torn into bite-size pieces 1/4 cup vegetable oil
1. Mix vinegar, salt, monosodium glutamate, garlic and pepper; toss with mushrooms and let stand 15 minutes.
2. Toss spinach and oil until leaves glisten. Toss mushroom mixture with spinach.
