2 lbs. large raw shrimp 1 cup sifted all-purpose flour 1/2 teaspoon sugar dash of curry powder 1 egg 1 cup water 2 teaspoon salad oil 1/2 teaspoon salt
1. Peel shrimp; leave tail on.
2. Slit shrimp along back; remove sand vein. Flatten; make cut in back. Pull tail through; pat dry.
3. Combine dry ingredients; add egg, water, and oil; beat well. Dip shrimp in batter; fry in hot fat until golden brown.
4. Remove to paper towels.
5. Serve immediately.
