6 green peppers, sliced thin 2 large onions, sliced thin 4 Tbs. olive oil 5 tomatoes, peeled 1 garlic clove, crushed Salt and pepper to taste 10 eggs 1/2 cup whipping cream 4 Tbs. butter
1. Saute' green peppers and onions in olive oil until soft.
2. Add tomatoes, garlic and seasonings; simmer until vegetables are very soft, crushing occasionally with fork.
3. Beat eggs lightly with cream.
4. Heat butter in a large skillet. Add eggs; cook over low heat, stirring constantly, until just set.
5. Arrange eggs on a heated platter; spoon vegetable mixture around eggs.
6. Garnish with diamonds of toasted white bread.
