Baby spinach leaves, torn Mandarin oranges, drained (or fresh orange or tangerine pieces) Purple onion slices, thin and separated Slivered almonds or cashews
1. Place spinach in individual salad bowls.
2. Layer oranges, then onion slices, then nuts.
3. Serve with choice of lowfat or fat-free dressing.
(Poppyseed dressing is good.)
