2 chicken breasts, cooked and cut into bite-size pieces (other pieces may be substituted) 1 10-oz. package chopped broccoli, cooked and drained 1 cup mayonnaise 1 can cream of chicken soup 1 to 2 tablespoons lemon juice 1/2 teaspoon curry powder 1 cup grated cheese 1 cup crushed Ritz crackers 1/2 stick margarine
1. Spread broccoli in bottom of casserole dish (7x11 or 9x13, depending upon thickness desired)
2. Layer chicken pieces on top of broccoli.
3. Mix mayonnaise, cream of chicken soup, lemon juice, and curry powder. Pour over top of chicken.
4. Sprinkle grated cheese over top of soup mixture.
5. Sprinkle cracker crumbs on top of cheese.
6. Dot with butter.
7. Bake at 350 degrees for approximately 45 min.
