1/4 cup olive oil 1 large green pepper, cut into thin strips 1/2 teaspoon crushed red pepper 3/4 teaspoon crushed, dried thyme 2 lbs boneless chicken breasts, cut into thin strips 2 tablespoons red wine vinegar 1/2 lb thickly sliced mushrooms hot, cooked spaghetti or linguini jar Old World Style Ragu Spaghetti Sauce (or homemade) 2 large, sweet red or yellow peppers
1. Heat olive oil and red pepper in a Dutch oven on medium-high heat. Add chicken and saute 5 minutess, or until golden brown.
2. Remove chicken from oven with a slotted spoon; set aside.
3. Add mushrooms; saute 4 to 5 minutes, or until tender.
4. Stir in spaghetti sauce, peppers, thyme, vinegar and chicken; bring to a boil. Reduce heat and simmer 8 to 10 minutes, or until peppers are just tender, stirring occasionally.
5. Serve over spaghetti or linguini.
