1 deepdish pie shell, unbaked 3 lbs peeled and sliced tart apples* 1 cup undiluted evaporated milk or other heavy cream 1/4 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1/3 cup sifted all-purpose flour 3/4 cup sugar pinch of salt Don't worry about exact amount; just heap into pie shell.
1. Prick sides and bottom of pie shell.
2. Arrange apple slices in pie shell.
3. Combine evaporated milk, nutmeg, and cinnamon. Beat until smooth and thick.
4. Mix flour, sugar, and salt.
5. Gradually blend in milk mixture with flour mixture; pour over apples.
6. Bake at 450 degrees for about 20 minutes, or until crust begins to brown.
7. Cover pie with aluminum foil and reduce heat to 350 degrees. Bake an additonal 45 minutes, until filling thickens.
8. Remove from oven. Cool slightly and serve warm with vanilla ice cream or slices of cheddar cheese.
