1 1/2 cups heavy cream 3 ounces unsweetened chocolate, chopped 2/3 cup packed dark brown sugar 4 ounces bittersweet chocolate, chopped 1/4 cups unsalted butter, softened 3 tablespoons Amaretto, or to taste
1. In a small heavy saucepan, combine the cream and brown sugar.
2. Bring the mixture to a boil over moderate to high heat, whisking occasionally. Continue to boil, whisking, until sugar is dissolved.
3. Remove pan from heat and add chocolates, whisking, until they are melted.
4. Whisk in the butter and the Amaretto. Continue to whisk until the sauce is smooth. Let cool slightly.
