3/4 cup finely chopped cooked chicken
1/3 cup finely chopped celery
2 Tbs. chopped pimiento
2 Tbs. mayonnaise
Salt and pepper, to taste
1 medium cucumber, trimmed
Finely chopped peanuts, for garnish
1. In a bowl, blend together the chicken, celery, pimiento, mayonnaise, and salt and pepper. Cover and refrigerate for 2 hours.
2. Using a sharp knife, cut the cucumber into 1/4-inch thick slices. Place in a bowl, cover, and refrigerate until ready.
3. To assemble, drop a spoonful of the chicken mixture into the center of each slice of cucumber, arrange on a platter, sprinkle with nuts, and serve at once, or chill until needed.
