1 (8-oz.) pkg. cream cheese, at room temperature 1/4 cup milk or soy milk 2 (10-oz.) pkgs. frozen chopped spinach, cooked and drained 1/3 cup freshly grated Parmesan cheese Salt and pepper, to taste
1. In a small bowl, stir together the cream cheese and milk until smooth.
2. Arrange the spinach in a 1-quart casserole or other ovenproof baking dish. Spoon the cream cheese mixture over the top, sprinkle with the Parmesan cheese, add salt and pepper to taste, cover with aluminum foil, and cook on outer edge of the barbecue rack for about 20 minutes.
3. Remove from the heat, but do not remove the foil until just before ready to serve.
Better to use freshly grated Parmesan cheese. The flavor is milder and better suited to this casserole.
