2 cups cranberries, chopped 1 orange, chopped with juice and rind reserved 2 tablespoons vegetable oil 1 egg, beaten 2 cups all-purpose flour, sifted 1 cup sugar 1/2 teaspoon baking soda 1 1/2 teaspoons baking powder 1 teaspoon salt 1/2 cup chopped pecans or walnuts
1. Sift flour, sugar, baking powder, and salt together; set aside.
2. Grate orange rind; combine in measuring cup with reserved orange juice. Add enough water to make 3/4 cup.
3. Mix flour mix with orange mix just until moistened.
4. Fold in cranberries and nuts.
5. Pour into greased loaf pan.
6. Bake at 350 degrees F for about 30 minutes. Check center with tester for doneness, and cook longer, if necessary.
