2 cups cranberries 3/4 to 1 cup sugar 1 cup water 1 3-oz package lemon Jello 1 cup chopped nuts 3/4 cup chopped celery
1. Chop cranberries in blender or food processor.
2. Place sugar in bowl; add cranberries and stir. Let stand until sugar dissolves, around 50-60 minutes.
3. Bring water to boil; add Jello and stir until dissolved. Chill until egg white consistency.
4. Stir cranberries, nuts, and celery into Jello.
5. Pour into lightly greased mold and chill until firm.
6. Unmold by placing mold in hot water for a few seconds to loosen. Then place congealed salad on a plate lined with curly lettuce OR use a plain plate and line edge of salad with fruit curls or slices. Garnish top as desired.
