3 cups cooked cubed ham 2 tablespoons butter 1/2 cup water 1/2 cup sugar 1 1/4 cups fresh cranberries, washed 2 tablespoons grated orange rind Salt and pepper to taste
1. In a large skillet, brown ham lightly in butter.
2. In a saucepan, bring water and sugar to a boil, stirring until sugar is dissolved.
3. Add 3/4 cup cranberries and simmer, covered, for 15 minutes.
4. Add orange rind and salt and pepper.
5. Combine ham with cranberry mixture; pour into baking dish.
6. Bake, uncovered, at 350° for about 20 minutes.
7. Add remaining 1/2 cup cranberries and bake an additional 15 minutes.
