1 qt. milk 2 eggs, separated 2/3 cup sugar 1 cup coconut (optional) 2 cups broken saltine crackers 1 tsp. vanilla
1. Heat milk to boiling. Beat egg yolks and sugar until frothy. Add to milk along with broken crackers.
2. Stir until thickened and boiling. Add vanilla and coconut and stir until pudding bubbles.
3. Fold in stiffly beaten egg whites.
4. Serve warm or cold.
5. Recipe may be halved.
