1/3 cup olive oil 3 Tbs. red wine vinegar 1 Tbs. dijon mustard 1 tsp. salt 1/4 tsp. black pepper 1/2 cup red onion, finely chopped 2 Tbs. fresh dill 1 pint each red and yellow cherry tomatoes 1 cup cucumber, quatered and sliced 1 head romaine lettuce 1 tomato, thinly sliced
1. In bowl, whisk together oil, vinegar, mustard, salt and pepper.
2. Stir in onion and dill.
3. Add cherry tomatoes and cucumber. Stir until evenly coated in oil mixture.
4. Tear lettuce leaves and arrange on platter.
5. Place tomatoe slices in circle on top of lettuce; to with tomato mixture.
