Sandwiches: 1/2 cup butter or margarine 1 cup sugar 1 egg 1 teaspoon vanilla 1 1/4 cups all-purpose flour 1/2 cup unsweetened cocoa powder 3/4 teaspoon baking soda 1/4 teaspoon salt Filling: 2 1/2 cups confectioners sugar 1/4 cup butter, softened 1 teaspoon vanilla 2 tablespoons milk ed food coloring (optional) green food coloring (optional) mint or strawberry extract (optional)
1. Cream butter, sugar, egg and vanilla until fluffy.
2. In a separate bowl, combine flour, cocoa, baking soda and salt.
3. Add dry ingredients to creamed mixture.
4. Shape dough into two 1 1/2" thick rolls. Wrap in waxed paper. Chill for several hours.
5. Slice chilled rolls, placing slices on ungreased cookie sheet.
6. Decorate by drawing the tines of a fork across each slice.
7. Bake at 375 F for 8-10 minutes or until almost firm.
8. Meanwhile, combine filling ingredients except food coloring and mint or strawberry extract.
9. Beat until spreading consistency. If desired, divide filling, and, with the food coloring, tint one half pink and the other half green.
10. Add 1/2 teaspoon mint extract to green filling and 1/2 teaspoon strawberry extract to red filling.
11. Cool cookies; spread filling on bottom side of cookie and top with second cookie.
