1 medium chicken, cut up 1/4 cup mayonnaise 1/2 cup bottled Russian dressing 1 pkg. dry onion soup mix 1 cup apricot-pineapple preserves
1. Arrange chicken pieces in 12x8-inch glass baking dish with thickest of meaty pieces around edges of dish.
2. Stir remaining ingredients together; spread over chicken, coating each piece.
3. Cover dish with paper towel or waxed paper.
4. Microwave on High for 20 to 25 minutes or until done.
5. Serve over rice.
