1 large fryer or small roasting hen (I use a fryer) 1 can of beer (no particular kind) creole seasoning
1. Thoroughly wash chicken, inside and out.
2. Sprinkle, inside and out, with Creole seasoning.
3. Open can of beer and pour out (or, better yet, drink) about one third of the can so that it won't spill.
4. Place beer in metal beer can holder for cooking if you have one, and then place holder in shallow roasting pan. If you do not have a holder, just center can of beer directly onto shallow roasting pan.
5. Lower chicken over top of beer can so that the chicken is "standing" upright. Resprinkle seasoning if necessary.
6. Carefully slide into oven and bake at 350 degrees for about 1 1/2 hours. (I slide it into a cold oven, then turn the oven on--less likely this way to burn yourself.)
7. Carefully remove from oven and let cool until able to handle without burning yourself. Remove chicken to platter. Slice and serve.
