3 tablespoons oil 3 eggs, beaten 1 onion, sliced 1 1/2 cups shredded carrots and frozen peas 2 teaspoon garlic powder 2 teaspoon ground ginger 1 teaspoon paprika 1/2 teaspoon salt 3 cups cooked rice 3 tablespoons soy sauce 2 cups shredded cooked chicken, pork or beef 2 scallions, thinly sliced, optional
1. In nonstick skillet heat 1 tablespoon oil over medium heat. Add eggs; cook, stirring, until cooked through. Remove from skillet.
2. In same skillet heat remaining oil; add onion and vegetables. Cook, stirring, until softened, 4 minutes.
3. Add next 4 ingredients; cook, stirring occasionally, 2 minutes.
4. Increase heat to high; stir in rice and soy sauce. Cook, stirring until browned.
5. Stir in meat or chicken, scallions and eggs; cook, stirring, until hot, 5 minutes.
