2 medium carrots 2 stalks celery 1 cup boiling water 1/2 small onion 3 tablespoon butter or margariene 1/4 cup flour 3 1/2 cups milk 1 1/2 cups cut-up cheese
1. Chop carrots and celery; cook in boiling water about 10 minutes, until tender.
2. Chop onion. Cook in butter until tender.
3. Stir in flour. Add milk slowly; stir until smooth. Cook and stir until thickened.
4. Add cheese, vegetables, and cooking liquid; stir over low heat until cheese melts.
