1 pound sharp cheddar cheese 1 pound mild cheddar cheese 2 cloves garlic, crushed 2 tablespoons Worcestershire sauce 1 teaspoon salt 1 teaspoon dry mustard 1/8 teaspoon hot pepper sauce 1 cup beer
1. Cut cheese into 1/4-inch slices and put in large bowl. Let stand at room temperature about 4 to 6 hours, or until very soft. Beat until light-colored and smooth.
2. Add garlic, Worcestershire sauce, salt, dry mustard and hot sauce.
3. Add beer, 1/4 cup at a time, blending well after each addition until light and fluffy.
4. Store in tightly covered jar in refrigerator.
5. Serve as a spread on crackers, or as a good topping for hot vegetables, baked potatoes, on on hot, homemade breads. Will keep several months.
