4 boneless and skinless chicken breasts 3 tablespoons olive oil 2 cloves garlic, sliced 2 dried red chiles, chopped 1 small red bell pepper, seeded and chopped 1 small yellow bell pepper, seeded and chopped 1/2 small onion, chopped 2 tablespoons soy sauce 1 1/2 cups roasted cashews
1. Cut chicken into bitesize pieces.
2. Heat oil. Add garlic and chiles; saute' until browned.
3. Add chicken and stir-fry until it turns white on the outside.
4. Add bell peppers, onion, and soy sauce; saute' until onions and peppers are crisp-tender.
5. Add cashews and heat through, about 1 minute.
