1 lb crabmeat 1 egg, slightly beaten 1/4 to 1/2 cup each: green bell pepper, onion, celery 1/2 stick (4 tablespoons) margarine or butter 1/4 cup all-purpose flour 1 cup milk 1/4 teaspoon salt Pepper to taste 1 teaspoon Worcestershire sauce Saltine crackers Margarine or butter to dot top of casserole
1. Mix crabmeat and egg. Place in lightly greased casserole dish.
2. Saute' bell pepper, onion, and celery in small amount of margarine or oil until crisp-tender. Remove from pan.
3. In small saucepan, melt 2 tablespoons margarine over low heat. Blend in flour, salt, and pepper; whisk or stir until smooth.
4. Stir in milk with saucepan ingredients. Heat thoroughly, but do not boil. (Mixture will be thick.)
5. Remove milk from heat and add Worcestershire sauce.
6. Pour over crabmeat in casserole dish.
7. Crumble Saltine crackers over all. Dot with margarine or butter.
8. Bake at 350 degrees for 35-45 minutes.
