Crust: 1 stick butter 1/3 pkg graham crackers, crumbled 1/4 cup sugar Filling: 3 8-ounce packages cream cheese, softened 4 eggs 3/4 cup granulated sugar 2 teaspoons vanilla extract pinch salt Topping: 1 pint(16 oz) sour cream 2 teaspoons vanilla extract 1/4 cup sugar
Crust:
1. Melt butter; add crumbs and sugar.
2. Press into a 9" springform pan.
3. Chill for one hour.
Filling:
1. Beat eggs, one at a time, in softened cream cheese.
2. Add sugar, vanilla and salt. Pour into chilled crust.
3. Bake at 350 degrees for 50 mins. Let cool for 20 mins.
4. Mix topping ingredients together; add to above.
5. Bake 10-15 mins. at 450 degrees.
Note: When using a springform pan, wrap tin foil all along bottom. When using regular pie pans, this recipe will make about 2 pies.
