1 1/2 cups butter or margarine
1/3 cup fresh lemon juice
1/4 cup packed light brown sugar
1/4 cup unsweetened apple juice
1/2 tsp. caraway seeds
4 cups shredded red cabbage
3 medium Macintosh apples, cored, peeled, and chopped
1. Melt the butter in a saucepan and add the lemon juice, sugar, apple juice, and caraway seeds.
2. Bring to a boil, add the cabbage and apples, and return to a boil.
3. Reduce to a simmer and cover lightly, stirring occasionally, for about 20 minutes.
