1 hen 1 stalk celery, cut in several pieces 1/2 stick margarine (use remaining half before broiling) 1 teaspoon or less salt 1/4 teaspoon pepper
1. Thoroughly wash chicken inside and out.
2. On stove, place large pot with enough water to nearly cover chicken. Add remaining ingredients to water.
3. Add chicken to pot, adjusting water level if necessary. Cover pot and bring to boil.
4. Adjust heat to low and continue cooking until chicken sticks tender with a fork (about 30 minutes).
5. Remove chicken and place on broiling pan.
6. Rub outside of chicken with remaining half of stick of margarine, to coat skin.
7. Broil chicken in oven until skin is nicely browned.
8. Cool chicken until easy to handle, slice, and serve.
NOTE: Use broth to make rice pilau, or place broth in freezable containers and freeze for later use.
