2 cups blueberries Juice of 1/2 lemon (1 Tbs.) 1/2 cup sugar 3 Tbs. butter or margarine, softened 1/2 cup milk 1 cup flour 1 tsp. baking powder 1/4 tsp. salt 1/2 to 3/4 cup sugar (according to your taste and sweetness of fruit) 1 Tbs. cornstarch Dash of salt 3/4 cup boiling water
1. Line well-greased 8x8x2-inch pan with blueberries; sprinkle lemon juice over.
2. Cream 1/2 cup sugar with butter; add milk. In a small bowl, stir together flour, baking powder, and salt. Add to creamed mixture. Spread batter over blueberries. Mix together 1/2 cup sugar with cornstarch and salt.
3. Sprinkle over batter; pour boiling water over top, do not stir.
4. Bake at 375-degrees for 1 hour.
Serve with vanilla ice cream on top.
